For comparison, I have a Horizon 240 with 5.7GS. I get about 2.7mpg on long haul trips, cruising at about 30mph and 3200rpm (11 gal/hour while cruising). Mine is carburated...a fuel injected engine would do about 10% better for about 3 mpg. My 175 mile round trip last November required 65 gallons. This was with 4 people plus gear. These numbers were right in line with the Users Manual projections.
Now while idling or moving at no-wake speeds, fuel consumption is barely noticeable...maybe 2 gals/hour.
While your boat is 2 ft shorter, it is about the same weight as my older horizon, so it is a fair comparison. Your 6-8 people sounds like a heavy load. So your numbers do not sound bad if you are doing a lot of cruising speed.
Things that can hurt mileage:
Heavy load.
Bottom Paint (rough surface)
Bent Prop or inefficient prop
Poor tune on engine
